Ube cold foam recipe
Ube cold foam is a thick, airy layer of purple foam that you top your coffee, matcha, or iced latte with. Softly sweet, with a vanilla-like flavor, and it instantly makes it look like something from a coffee bar.
You make it in 3 minutes with ube powder, cold cream or barista oat milk, and a milk frother.
Ingredients
- 2 to 2.5 g UBE.25 ube powder
- 1 tsp hot water
- 60 ml cold heavy cream, or 80 ml cold barista oat milk
- Optional: 1 tsp sugar syrup or vanilla syrup
Handig om te hebben
- A handheld milk frother
- A tall cup or pitcher
This is how you make it
-
Make a paste. Mix the ube powder with 1 tsp hot water to form a smooth paste.
-
Pour the cold cream or barista oat milk into a tall glass or pitcher.
-
Add the ube paste and the syrup, if using.
-
Froth. Use a handheld milk frother for 20 to 40 seconds until the foam is thick and glossy but still pourable.
-
Spoon or pour the foam over your drink, as shown in the photo.
Attention
Don't whisk for too long. If it becomes stiff like whipped cream, it won't pour nicely over your drink. Too thick? Stir in a splash of cold milk.
What are you betting on?
- Iced coffee or cold brew: coffee on the bottom, purple foam on top.
- Ube coffee: top the layered ube coffee with espresso with foam.
- Iced matcha: green and purple in one glass, for example with matcha from 22.Matcha.
- Iced ube latte: double ube. Check out the iced ube latte recipe.
- Use everything well chilled, then the foam will be firmer.
