Baking ube cookies
Colorful, chewy and addictively delicious: ube cookies are purple cookies with a soft, nutty flavor and a hint of vanilla. They go viral online for their color, and you can bake them in half an hour.
The purple comes from ube powder, not from food coloring. Below is the recipe for 16 to 20 cookies, plus a marbled version.
Ingredients
- 115 g unsalted butter at room temperature
- 100 g caster sugar
- 50 g light brown sugar
- 1 egg
- 2 tbsp UBE.25 ube powder, mixed with 1 tbsp warm water or milk
- 200 g flour
- ½ tsp baking powder
- Pinch of salt
- Optional: white chocolate chips
Handig om te hebben
- A baking sheet with parchment paper
- A mixer
- A sieve
This is how you make it
-
Preheat the oven to 175 °C and line a baking tray with parchment paper.
-
Butter and sugar. Mix the butter and both sugars for about 3 minutes until light and fluffy.
-
Add the ube. Add the egg and the prepared ube powder and mix until you have a smooth purple batter.
-
Dry ingredients. Sift in the flour, baking powder, and salt. Mix briefly until a firm dough forms.
-
Shape. Form balls of about 30 grams, place them on the baking sheet and press them down lightly.
-
Bake. Bake for 10 to 12 minutes.
-
Cooling. Let them rest on the baking sheet for a few minutes and then place them on a wire rack.
Attention
Don't bake them too long. Remove them from the oven when the edges are just firm and the center still looks soft. They will continue to cook on the baking sheet and stay chewy.
Variations
- Marbled ube cookies: divide the dough into two parts, mix an extra teaspoon of ube powder into one part and twist the parts together.
- Deeper purple? Add an extra teaspoon of ube powder. The color comes from the ube itself and stays beautiful after baking.
- Extra creamy: fold in white chocolate chips.
