What can you do with ube? Drinks, desserts and more

Ube is more than a purple latte. The powder dissolves easily, gives a mild vanilla-like flavour and a deep purple colour, and works just as well in drinks as in baked goods. Below you will find the most delicious applications, from classic Filipino to modern.

Drinks with ube

  • Hot ube latte: the classic. Creamy, purple and ready in 2 minutes.
  • Iced ube latte: ice-cold milk with a purple swirl.
  • Ube cold foam: thick purple foam for iced coffee or cold brew.
  • Ube matcha latte: a layered drink with ube at the bottom and matcha on top.
  • Dirty ube latte: an ube latte with a shot of espresso on top.
  • Ube smoothie or milkshake: mix a teaspoon of powder with banana, milk and ice.

For all drinks: first whisk the powder into a small amount of hot water with a bamboo whisk. After that, it mixes perfectly, even with cold milk.

Baking with ube

Ube gives baked goods a striking colour and a mild flavour that pairs well with butter, white chocolate and coconut. Try, for example:

  • Chewy ube cookies, optionally with a marbled effect
  • Pancakes or waffles with a scoop of ube in the batter
  • Cupcakes and cake with ube in the batter or buttercream
  • Donuts with a purple ube glaze

Tip: first mix the powder with a little warm water or milk, then the colour will distribute evenly through the dough.

Desserts with ube

  • Ube lemon tart: fresh, creamy and completely plant-based.
  • No-bake ube cheesecake
  • Ube ice cream or an ube swirl through vanilla ice cream
  • Ube panna cotta or pudding with coconut milk

Classics from the Philippines

In the Philippines, ube has been loved for generations. The best-known dishes:

  • Ube halaya: a sweet ube paste with coconut milk, the base of many desserts.
  • Halo-halo: an ice cream cup with shaved ice, fruit, jelly and ube.
  • Ube ensaymada: soft bread rolls with ube filling.

Which combinations work best?

  • Coconut: the classic Filipino combination.
  • White chocolate and vanilla: enhance the mild sweetness.
  • Lime and lemon: add freshness. Note: acidity makes the colour pinker.
  • Espresso and matcha: for a drink with more character.
