Ube latte on your menu: how to go about it

You've decided: ube is going on the menu. Or you're still considering it. This article explains how to practically introduce an ube latte to your business: from dosage and preparation at the bar to pricing and how to sell it.

1. Choose your drinks

Start small. Two variants are enough:

If it sells well, add a signature drink like the ube matcha latte or ube cold foam as an upsell for iced coffee.

2. Standardize the dosage

Drink Ube powder Hot water Milk
Ube latte (hot) 2 to 2.5 g 20 ml 180 to 200 ml
Iced ube latte 2 to 2.5 g 20 ml 180 ml + ice
Ube cold foam 2 to 2.5 g 1 tsp 60 ml cream or 80 ml barista oat milk

Tip: weigh it out for the first week, and then use a fixed measuring spoon.

3. Preparation at the bar

  1. Put the powder in a pitcher or bowl.
  2. Add hot water and whisk until lump-free with a bamboo whisk or milk frother.
  3. Steam or froth the milk as you would for a regular latte.
  4. Pour the milk into the ube, or for iced: milk and ice first, then pour the ube over it.

You can also prepare the ube base in small batches just before the rush.

4. Pricing

With 2 to 2.5 grams per latte, you get about 50 lattes out of 100 grams. The cost of the powder is therefore low compared to the selling price. The milk and your labor time are comparable to a regular latte. Many businesses therefore price an ube latte the same as or slightly above a matcha latte. 5. How to sell it

  • Describe it briefly: "Purple yam from the Philippines, lightly sweet, caffeine-free."
  • Show it: a photo on the menu or a sample glass on the bar.
  • Train your team: let everyone taste it, so they can recommend it.
  • Offer it in the afternoon: as a caffeine-free alternative to coffee. Also read is there caffeine in ube?
  • Make it shareable: you can find presentation tips in ube in coffee bars and restaurants.
